Wine


Wine is made by fermenting grape juice with yeast. The grape skin is rich in wild yeast, so fermentation can be initiated by simply squeezing and leaving the ripe grape fruit to produce wine. In this way, alcohol fermentation directly from sugar is called “single fermentation”. A typical example is wine made from grape juice (simple fermented liquor).


History

It is believed that wine was consumed 10000 years ago. At the ruins of the Mesopotamian civilization and the murals of the pyramids, wine making and drinking were depicted. We can see that wine has been popular with people since ancient times.
In the Neolithic era, grapes that had already been stored as preserved food were known to become wine, and it is said that wine production began in earnest thousands of years ago. The history of Japanese wine is short, and the first domestic wine was brewed in 1870 in Kofu City, Yamanashi Prefecture. After that, he made efforts to send human resources to France and learn winemaking, and gradually became a full-fledged wine. Today, wine grapes are produced and brewed in places such as Nagano prefecture and Hokkaido.


Kinds

Wines are categorized by brewing method, color, taste, and locality. For example, there are three types of red, white, and rose when classified by color.
The taste is roughly classified into "sweet" and "dry". This is due to the sugar content of the wine, so red wines are mostly dry and white and rose wines range from sweet to dry. Red wine is rich in polyphenols (antioxidants) found in grape skins.
