Torimeshi in Amami
Black sugar of major produce in this island was taken away by compulsory clam control by the clan.
Local people treated a government official who came from rough sea by offering Torimeshi in poverty caused by the compulsory control.
As this dish is also called “Tonosama food”, Torimeshi is a typical dish which has a refined taste, cooked with extra effort.

Tonkotsunomisoni
A pork dish began to be made by samurais at Satsuma in a battlefield and hunting field, and it has a history of 300 years.
This dish is manly food in which stewed bony chops are boiled with big white radishes, shochu, black sugar and miso.
