Breeding is the process of creating new varieties of rice by combining
rice varieties in order to make them more resistant to heat, disease, and
other factors, and to produce more rice.
In order for consumers to buy more rice, we produce rice that is safe and secure, and in order to make it cheaper, we produce rice that can be harvested in large quantities. |
Rice for business use is rice that has been bred to have good quality and to produce a larger quantity of rice. In Mie Prefecture, "Hoshijirushi" is produced.
Local rice is rice produced in a particular region, such as "Koshihikari" in Niigata Prefecture or "Nanatsuboshi" in Hokkaido.
It is characterized by a better taste than commercial rice.

Koshihikari is a rice that was originally grown in Niigata. Koshihikari
was crossbred with something else, such as Akitakomachi, Hinohikari, Mori
no Kumasan, and Hitomebore.
The rice produced from Hitomebore includes Tsuyahime, Natsuboshi, and Yumeshizuku. You can see that many types of rice have been created from Koshihikari.
