First,put the flour in a boul,
add salt water little by little,
and mix them.
when it is mixed up, knead it firmly until it comes together.
2,step
Put the dough into a plastic bag, and step on it.
By doing so, udon gets chewiness
.
3,age
After repeating step2 several times,
Wad the dough and put it into a new plastic bag,
and leave the dough about an hour.
4,roll the dough
when step3 is done, roll the dough flat.
5,cut
fold the rolled dough into three,
then, cut them evenly, about 5mm each .
6,boil
put the udon into boiling water,
and boil them about 30 minutes.
Make sure they do not stick to the base of the pot.
7,finish!!
When they are boiled, put udon into a colande,
and firm udon with cold water.
It's done!
