Mr. Marugen, who is so particular about making ramen, answered our questions about making ramen! Here is the content.

Q1.

It was on the homepage "Marugen's good place"
I would like to ask about "There are plenty of menus that are good for the body."
If you have a chance to make such a menu
Please let me know.
In addition, when making noodles with 50% less sugar,
Are there any tricks to make the taste consistent with regular noodles?

A1.It is a specialty store, but as a ramen shop that is visited by families and women
We started development with the desire to be a store that all customers can enjoy.
When I came with my family, my father was in high spirits,
Some grandparents and mothers are concerned about calories.
But you came all the way to eat at Marugen.
We started development because we want you to enjoy it.

As a serious matter during development,
I use starch instead of wheat flour to cut sugar,
If you cut too much sugar, the proportion of starch is high,
It will be like konjac noodles without the flavor of wheat.
On the contrary, if you reduce the starch and give priority to the flavor of wheat, it will not be possible to say that it is a sugar cut,
As a noodle, it was difficult to bring it to a line that could be tolerated.

Q2.

Let me ask you a question about Nikusoba.com.
It seems to be made with particular attention to materials,
Is there something you think about as a shop?

A2. Originally, our company started as a Japanese restaurant.
In addition, it was born from the development of a yakiniku brand,
This is our flagship product, "Mature Soy Sauce Meat Soba".
By combining 3 kinds of domestically produced soy sauce, the taste is deep and deep.
In addition, we use rare parts of pork and cook it one by one in a hand pan.
We are committed to serving hot.
Marugen Ramen is a large ramen specialty store,
Each cup is made with the same commitment.

Q3.

Mr. Marugen, are there any other SDGs-related initiatives you are working on?

A3.
People with and without disabilities are comfortable,
We support activities that aim to create an environment where people can spend time with peace of mind.
We provide training on how to respond to customers with disabilities when they visit our stores and how to think about them.

Masumoto

masumoto
At this shop, we have commercialized the leek that is left over when making ramen. In addition to working on food loss, it seems that they are particular about the taste of the product. It seems that this product is delicious even if you eat it with ramen!

Mendoka

Mendou Incense
< li>
At this shop, there is a healthy "Vegetable Ramen" that can be eaten by all age groups called "Specialty Vegetable Tonkotsu/Vegetable Ramen" that goes well with pork bone soup. You can order according to your taste, and the noodles, soup, and health aspects are of course, and it is a shop that is particular about the speed of serving ramen.

Ms.
He answered our questions about ramen! Here is the content.

Q1.

It was in the menu on the home page. Please tell us how you came up with the menu, the famous vegetable pork bone and vegetable ramen (it looked very healthy with plenty of vegetables)

A1. When Mendoka was first founded, it was a time when the image of tonkotsu ramen was centered on male customers. Therefore, we used plenty of vegetables with the idea that by offering a specialty product that only Mendoka can offer, which is not available at other ramen shops, it will please customers of all ages, including families, female customers, and elderly customers. "Vegetable ramen" was born, which is healthy and goes well with pork bone soup.

Q2.

It seems that you can change the amount of oil to your liking.

A2. At the same time, when designing the menu, I adopted the idea that if I were a customer, I would be happy if I could choose the amount of oil. One of our definitions of "richness" is the idea that "having the pleasure of choosing" is the starting point.

Q3.

Is there anything you have done to make the store accessible to everyone from children to the elderly?

A3. What we always think about when creating a store. We want to be a store that walks with our customers in their lives. Who are the customers of each store? What kind of customers do you want to please? We are building a shop based on this perspective.

Even if it is difficult to please customers of all generations at a single store, we can please each generation by developing multiple stores with different menu widths and product concepts. I think it will be possible to get it. There are shops that I would like families with children to enjoy, there are shops for young people, and there are also shops for adults. We put ourselves in the position of customers of each generation and think first of all about what kind of products and services we can provide to make them happy.
