Cricket Tsukemen

This is a tsukemen noodle soup made with Japanese dashi and cricket powder.
Most tsukemen are made with pork or seafood soy sauce, but crickets are a delicious alternative.
The result is higher in protein and lower in fat compared to ordinary ramen.
(In the video, three servings are made)


Ingredients for 1 serving
・3 tablespoons cricket powder
・1 Japanese "dashi" package (with salt)
・200ml water
・1 serving raw Chinese noodles
・1/3 teaspoon grated ginger
・1/2 teaspoon sesame oil
・50g bean sprouts (1/4 package)
・1/8 green onion
・1 half-boiled seasoned egg

1.Boil the "dashi" package and water.
2.Roast the cricket powder.
(At this point, remove from heat as soon as the fragrant.)
3.Prepare the toppings.
4.Add the "dashi" to the roasted cricket powder.
5.Add the ginger and sesame oil.
The soup is now complete.
6.Boil the bean sprouts and noodles.
7.Cool in ice water and place on a plate to finish.
