Food loss reduction
   Advantages and disadvantages of food loss reduction
 The breakdown of food loss from households can be broadly divided into three categories: direct disposal, excessive removal, and leftovers. Among them, the causes of "direct disposal" are, as shown in Fig. 1, the expiration date/use-by date has passed, the freshness of the food has decreased, the food has spoiled, and mold has grown. On this site, we have introduced how to use leftover gyoza skins to "make the leftovers into a different menu and eat them deliciously" as a way to reduce "direct disposal" of food loss from households. In addition, I think it is important to buy as much food as you can eat.
 
 Also, from Fig. 2, the amount of food was large as a cause of "leftovers". Therefore, I think that it is possible to reduce food waste at home by making only the amount that can be eaten when cooking.

 In this way, each person can be directly involved in reducing food loss by doing something close to them. These food loss reduction activities reduce the amount of fuel used for transporting, incinerating, and landfilling food waste, leading to a reduction in emissions of greenhouse gases such as CO2 and methane that cause global warming. You can also reduce tax expenditures (about 16,800 yen per year per person: Ministry of Agriculture, Forestry and Fisheries, August 2022) used for food waste disposal.

 By the way, did you know that food loss and climate change are deeply connected? The main cause of climate change is due to greenhouse gases. As can be seen in Figure 3, greenhouse gases from food waste account for approximately 8% of global greenhouse gas emissions, roughly the same proportion as emissions from road transport.

 According to Figure 4, the world's food waste emits about 4.4 gigatons of greenhouse gases annually. This means that if food waste is considered as a country, it will become the third largest greenhouse gas emitter in the world. From this, it can be said that food loss is a major burden on the global environment.

 Furthermore, it is estimated that about 9.7 billion people will have food problems in 2050. If that happens, there will be food shortages. Japan is a country with a very low food self-sufficiency rate. In this way, I think that it was conveyed that "food loss reduction is necessary" from the perspective of the environment and food.

 1. Correctly understand best before and expiry dates

・If you understand correctly, you will not notice that the deadline has passed.
2 When shopping, buy what you need
・By buying only what you need, you can finish eating quickly, reducing spoilage and expiration.

・Make only what you need
・If you can't eat it all, replace it with another dish.
4 Make the surplus something different
