Classification Description

The following is a description of the types of tea presented in three categories.
First, green tea (unfermented tea) is made from plucked tea leaves that are quickly heated (steamed)to stop the fermentation process.
Second, black tea (fermented tea) is tea that has been fully fermented.
Third, oolong tea(semi-fermented tea) is a tea that is heat-treated at the halfway point of fermentation.

Three Classifications

The three types are, unfermented tea,semi-fermented tea, and fermented tea.
Un-fermented teas are regular sencha, deep-steamed-sencha, gyokuro, stem tea, bancha, powdered tea, tencha, matcha, roasted tea, and genmaicha.

There are nine major types of tea. The following teas are available: black tea, oolong tea, sencha (regular), deep-steamed-sencha, gyokuro, stem tea, bancha, tencha, powdered tea, matcha, roasted tea, and genmaicha.

Tea Characteristics


Sencha is a tea made by quickly steaming, rubbing, and drying the new shoots picked from the most commonly consumed green tea.
Deep-steamed-sencha is a tea made by steaming the leaves for about twice as long as regular Sencha, which controls astringency and gives the tea a milder tasteand darker color.
Gyokuro is a high-grade tea grown by covering the tea plantation with reed screens (Yoshizudana) to avoid direct sunlight, and increasing flavor and controling bitterness.
Stalk tea is a tea made from the stems separated when making sencha and gyokuro, also called stick tea.
Bancha is a tea made from hardened or overgrown leaves and stems.
Tencha is a tea made by steaming tea leaves grown at the same time as gyokuro and then drying them without rubbing.
Matcha is a powdered tea made by grinding ground tea into a powder by a millstone or other means.
Roicha is a tea made by roasting Bancha and other teas over high heat.
Genmaicha is a tea made by mixing roasted rice with Bancha.
Oolong tea is a semi-fermented tea categorized between black tea and green tea.
Black tea is a dark orange-red, aromatic tea made from fully fermented tea leaves. 70% of the tea produced in the world is black tea, and its main production areas are India and Sri Lanka.
