Sushi

History

 "Narezushi" was made in the Nara era and the Muromachi era.
In the Nara era people ate only fish. And in the Muromachi era, fish and
rice were fermented with liquor for a few days or several hours, and people
came to eat fish and rice in the days of moderate sourness.
Sushi was eaten in a house at the time of event and celebration such as
New Year holidays, young bird Festival, and a summer festival. In addition,
sushi was eaten at the ceremony like a wedding that was a turning point of
the life. How to make sushi and materials of sushi were devised in
Japanese each place. There is still various sushi in each districts.
 Vinegar came to be made well in Japan from the Edo era, and it came to
be sold.
 Vinegar has high sterilization nature, and is effective on food against
being corrupt. So people became to eat fish with vinegar mixed rice.
 Men ate a few sushi by hand after drinking at a sushi stand. This is the Tokyo-style sushi.
 These sushi were three or four times of the present finger sushi, and
people ate only three or four.
