History
It is thought that pickles were made all the time from old days.
The oldest record about pickles of the Nara era remains. Pickles were
developed in order to preserve the harvested food, or to store them
to prepare against a bad harvest.
Vegetables are soaked in salt, miso, sake lees, vinegar,
salted rice-bran paste, or soy sauce. Pickles are made of vegetables
such as turnip, greens , eggplant, leek, bamboo shoot, and Japanese parsley.
