Have you noticed any changes in the demand for rice flour recently?
Although the national and local governments are putting effort into increasing consumption of rice flour, consumer demand does not seem to have changed that much.
Why is the rice flour milled by Komel able to be made as fine as 23 microns?
Because it takes time to mill the flour. Although the milling costs are high, we use a large amount of rice flour, so we have reduced it to a level that can be used as a raw material.
Please let us know if there is anything you are careful about when developing a product.
We do not develop products that do not require the use of rice flour (we do not force rice flour into products unless they are essential ingredients, such as ice cream), and we use rice grown in Shonai, Yamagata Prefecture.
Recently in Japan, the number of products using rice flour is increasing. What do you think is the reason for this increase?
I think this is because the government is putting effort into expanding rice flour consumption, and the number of subsidies and subsidy systems is increasing, making it easier for businesses to start developing rice flour products.
Are there any new fields of products using rice flour that you would like to expand your business into?
We would like to work on the development of bread.
